Niels cooks, Sabrina welcomes you.
How it began
We met somewhere between Groningen and Rotterdam; it was love at first sight. A restaurant of our own became the dream. On 14 February 2023 it came true, and we took over Bisque on the Verlengde Hereweg in Groningen.
We kept the name Bisque with conviction. Bisque is a classic of French cooking, and so it represents what we stand for.
We have chosen to work as a pair, and so we do the daily preparation together.
As soon as the door opens, we split up:
Niels cooks, Sabrina serves.


Niels, the kitchen
Niels grew up in Haule, the village where he has lived for thirty years and where he still buys his artisan regional produce round the corner, at Jansma.
He learned his trade at De Lindenhof in Giethoorn (awarded two Michelin stars since 2005), under Martin Kruithof, and at the former De Loohoeve in Schoonloo (one Michelin star), under Jeroen and Marleen Brouwer.
Niels’s cooking is classic French because, in his own words, he ‘thinks it tastes best’. It also goes perfectly with craft, something he never stops exploring. In that spirit he bakes all the bread rolls at Bisque himself, and sets the bar high with them.

Sabrina, the table and the cellar
Sabrina worked as a hostess in Rotterdam, in larger hotels and bar-restaurants, where the atmosphere was always allowed to be lively. At Hotel New York in Rotterdam she developed a growing passion for running a restaurant independently. Eating out, she believes, should not be complicated, but simply clear and convivial at the same time.
At Bisque, hospitality takes a personal form: spontaneous, sincere and always suited to the moment.

Every evening is different
Every evening here is different, because of who is at the table. That is just as true of Le Déjeuner du Dimanche on a Sunday afternoon, of private dining when a party has booked the whole restaurant, of a winemaker’s dinner where the winemaker sits at the table, or of a four-hands dinner with a fellow chef.
